Preheat your oven to 400°F (200°C).
In a small bowl, whisk together the olive oil, minced garlic, Dijon mustard, honey, soy sauce, lemon juice, dried thyme, salt, and pepper until well combined.
Place the salmon fillets skin-side down on a baking sheet lined with parchment paper.
Brush the marinade generously over the salmon fillets, ensuring they are well coated.
Bake in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
Remove from the oven and let it rest for a couple of minutes.
Garnish with fresh parsley before serving.
