Method
 

Preparation Steps
  1. Preheat the oven to 400°F (200°C).
  2. Lightly oil a large baking dish with olive oil, covering the bottom.
  3. Chop the red onion and halve cherry tomatoes, adding them to the baking dish.
  4. Season the vegetables in the dish with salt, pepper, and dried oregano. Toss gently to coat.
  5. Pat the cod fillets dry and season both sides with salt, pepper, and oregano.
  6. Place the cod fillets on top of the vegetable layer in the baking dish.
  7. Drizzle with olive oil and fresh lemon zest.
  8. Bake for about 20 minutes until the cod is opaque and flakes easily with a fork.
  9. Remove from oven and squeeze fresh lemon juice over the cod and garnish with parsley.
