Step-by-Step Instructions
  1. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the diced onion and sauté for about 5 minutes until translucent and fragrant. Stir in the minced garlic and cook for an additional 30 seconds.
  2. In a large bowl, combine the sautéed onion and garlic with spinach, ground chicken, breadcrumbs, Greek yogurt, dill, and lemon juice. Add oregano, paprika, cumin, salt, and pepper. Mix thoroughly until cohesive.
  3. Dampen your hands slightly, then shape the mixture into 8 patties, each about ½ inch thick. Arrange on a plate.
  4. In the same skillet, heat the remaining oil over medium-high heat. Add patties in a single layer, avoiding overcrowding. Cook for 5-6 minutes on each side until golden brown and cooked through.
  5. Transfer the cooked patties to a plate lined with paper towels to drain excess oil. Serve warm with garnishes or sauces like tzatziki.
