  • 1 cup kalamata olives pitted and halved
  • 4 cloves garlic minced
  • ¼ cup sun-dried tomatoes chopped
  • 2 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp dried thyme
  • 1 lemon juiced
  • ½ cup feta cheese crumbled
  • 2 tbsp fresh parsley for garnish

Step-by-Step Instructions
  1. Begin by gathering all your ingredients for the Mediterranean Chicken Stir Fry.
  2. Chop the chicken breasts into bite-sized pieces, and slice the zucchini into half-moons. Dice the red bell peppers and slice the red onion into strips. Halve the cherry tomatoes and chop the sun-dried tomatoes. Mince the garlic and have all spices ready.
  3. Heat olive oil in a large skillet over medium-high heat. Once shimmering, add chicken in a single layer. Sear for 5-7 minutes until golden brown and cooked through.
  4. Transfer cooked chicken to a plate. In the same skillet, add onion and garlic, sauté for 1-2 minutes until fragrant. Add zucchini and bell peppers, cook for another 3-4 minutes.
  5. Return chicken to skillet, add cherry tomatoes, olives, and sun-dried tomatoes. Season with salt, pepper, oregano, basil, and thyme. Cook for 2 minutes.
  6. Drizzle lemon juice over the stir fry and toss. Remove from heat, sprinkle feta cheese on top, and garnish with parsley.
