- Gather all your ingredients, chop the chicken into bite-sized pieces, and slice the vegetables.
- Heat 2 tablespoons of olive oil in a large skillet. Add the chicken and season with salt and pepper, searing for 7-8 minutes.
- In the same skillet, add the remaining olive oil and the minced garlic, red onion, zucchini, and red bell pepper. Sauté for 3-4 minutes.
- Return the cooked chicken to the skillet, along with sun-dried tomatoes, olives, oregano, basil, thyme, and salt/pepper. Mix and heat for 2-3 minutes.
- Drizzle with lemon juice and sprinkle feta cheese on top. Toss gently and serve, garnished with parsley if desired.
