Ingredients
  

For the Stir Fry
  • 2 pieces Chicken breasts cut into uniform pieces
  • 2 tablespoons Extra virgin olive oil for sautéing
  • 1 medium Zucchini or yellow squash as a substitute
  • 1 medium Red bell pepper or any sweet pepper variety
  • 1 medium Red onion or yellow/white onion as alternatives
  • 1 cup Cherry tomatoes or canned diced tomatoes
  • 1/2 cup Kalamata olives or green olives as an alternative
  • 2 cloves Garlic minced
  • 1/4 cup Sun-dried tomatoes or use fresh tomatoes if desired
  • 1 teaspoon Dried oregano for seasoning
  • 1 teaspoon Dried basil
  • 1 teaspoon Dried thyme
  • 2 tablespoons Lemon juice drizzle at the end
  • 1/2 cup Feta cheese omit for dairy-free version
  • 2 tablespoons Fresh parsley optional garnish

Method
 

Preparation Steps
  1. Gather all your ingredients, chop the chicken into bite-sized pieces, and slice the vegetables.
  2. Heat 2 tablespoons of olive oil in a large skillet. Add the chicken and season with salt and pepper, searing for 7-8 minutes.
  3. In the same skillet, add the remaining olive oil and the minced garlic, red onion, zucchini, and red bell pepper. Sauté for 3-4 minutes.
  4. Return the cooked chicken to the skillet, along with sun-dried tomatoes, olives, oregano, basil, thyme, and salt/pepper. Mix and heat for 2-3 minutes.
  5. Drizzle with lemon juice and sprinkle feta cheese on top. Toss gently and serve, garnished with parsley if desired.
