For the Chicken
  • 4 pieces boneless, skinless chicken breasts can substitute with chicken thighs for a richer taste
For the Veggies
  • 3 medium zucchini, sliced can substitute with yellow squash or eggplant
  • 3 cloves garlic, minced fresh garlic is preferred
  • 1 piece lemon, juiced and zested important to use fresh lemon
For Seasoning
  • 1 teaspoon dried oregano can substitute with marjoram or thyme
  • 1 teaspoon dried basil fresh basil can also be used
  • 1 teaspoon dried thyme fresh thyme can replace dried
  • salt and freshly ground black pepper to taste
For the Topping
  • 3 tablespoons olive oil essential for roasting
  • 1/3 cup grated Parmesan or crumbled feta cheese goat cheese can also be used

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 375°F (190°C) and grease a 9x13 inch baking dish with olive oil.
  2. In a large bowl, season chicken breasts with salt, pepper, and half of the dried herbs. Pound chicken to an even thickness.
  3. In a separate bowl, combine zucchini, garlic, remaining olive oil, lemon juice, and zest. Toss with rest of herbs and season to taste.
  4. Place seasoned chicken in the baking dish and spread the zucchini mixture around it.
  5. Bake for 25-30 minutes, checking the chicken reaches 165°F (74°C).
  6. In the last 5 minutes, sprinkle cheese over the dish and return to oven until melted and golden.
  7. Allow the dish to rest for 5-10 minutes before serving warm.
