Ingredients
  

For the Steak
  • 1 pound Sirloin Steak Choose a tender cut for maximum flavor and juiciness.
  • 2 tablespoons Olive Oil Extra virgin for rich taste.
  • 3 cloves Garlic Minced.
  • 1 tablespoon Lemon Juice Freshly squeezed.
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Thyme
  • to taste Salt

For the Base
  • 2 cups Cooked Grains Brown rice, quinoa, or cauliflower rice.
For the Toppings
  • 1 cup Roasted Chickpeas Optional.

For the Tzatziki
  • 1 cup Greek Yogurt Coconut yogurt for dairy-free.
  • 1/2 cup Grated Cucumber Squeeze to remove excess moisture.
  • 1 tablespoon Lemon Juice
  • 1 clove Garlic Minced.
  • 1 tablespoon Fresh Dill Or other herbs.
For the Vinaigrette
  • 3 tablespoons Olive Oil
  • 1 tablespoon Lemon Juice
  • 1 teaspoon Honey Omit for Whole30.
  • 1 clove Garlic Minced.
  • 1 teaspoon Dried Oregano

Method
 

Preparation Steps
  1. Marinate the steak by combining olive oil, garlic, lemon juice, oregano, thyme, salt, and pepper. Coat the steak and marinate for at least 30 minutes.
  2. Prepare the tzatziki by mixing Greek yogurt, grated cucumber, lemon juice, garlic, and dill. Refrigerate for at least 15 minutes.
  3. Whisk together olive oil, lemon juice, honey, garlic, and oregano for the vinaigrette. Set aside.
  4. Sear the steak in a hot skillet for 4-5 minutes on each side. Let rest for 5 minutes before slicing.
  5. Prepare bowls with chosen grains and top with tomatoes, cucumber, onion, olives, and chickpeas.
  6. Assemble by placing sliced steak over grains and vegetables, adding tzatziki and vinaigrette, and finishing with feta and herbs.
