Preparation Steps
- Marinate the steak by combining olive oil, garlic, lemon juice, oregano, thyme, salt, and pepper. Coat the steak and marinate for at least 30 minutes.
- Prepare the tzatziki by mixing Greek yogurt, grated cucumber, lemon juice, garlic, and dill. Refrigerate for at least 15 minutes.
- Whisk together olive oil, lemon juice, honey, garlic, and oregano for the vinaigrette. Set aside.
- Sear the steak in a hot skillet for 4-5 minutes on each side. Let rest for 5 minutes before slicing.
- Prepare bowls with chosen grains and top with tomatoes, cucumber, onion, olives, and chickpeas.
- Assemble by placing sliced steak over grains and vegetables, adding tzatziki and vinaigrette, and finishing with feta and herbs.
