Ingredients

  • 4 boneless skinless chicken breasts (about 1.5 pounds)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 tablespoon fresh lemon juice
  • Fresh parsley chopped (for garnish)

Method

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix together garlic powder, onion powder, paprika, oregano, salt, and black pepper.
  3. Pat the chicken breasts dry with paper towels. Rub the spice mixture evenly over both sides of each chicken breast.
  4. In a large oven-safe skillet, heat olive oil over medium-high heat. Once hot, add the chicken breasts and sear for about 4-5 minutes on each side, until golden brown.
  5. Add butter and lemon juice to the skillet, spooning the melted butter over the chicken.
  6. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the internal temperature of the chicken reaches 165°F (75°C).
  7. Remove from the oven and let the chicken rest for 5 minutes before slicing. Garnish with chopped parsley before serving.
