Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Line a baking sheet with aluminum foil and place an oven-safe rack on top.
  2. In a medium mixing bowl, combine brown sugar, black pepper, cayenne pepper, and optional red pepper flakes to create a sticky mixture.
  3. Lay out the thick-cut bacon slices and generously coat both sides with the brown sugar mixture.
  4. Place the bacon slices onto the prepared rack.
  5. Bake for 15 minutes, then flip the bacon and continue baking for an additional 10-15 minutes until crispy.
  6. Remove from oven and transfer bacon to a plate lined with paper towels to cool.
  7. Increase oven temperature to 425°F (220°C). Slice the baguette into 1/2-inch thick pieces and arrange on a baking sheet.
  8. Brush crostini lightly with olive oil and season with salt and pepper.
  9. Bake crostini for 7-10 minutes until golden brown.
  10. Gently press cooled bacon pieces into the goat cheese log, garnish with additional bacon, and drizzle with maple syrup.
