  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chunks or semi-sweet chocolate chips
  • 1/2 cup chopped peanuts optional

Method
 

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the peanut butter and granulated sugar until well blended.
  3. Add the egg, vanilla extract, baking soda, and salt to the mixture. Stir until fully combined.
  4. Gently fold in the chocolate chunks and chopped peanuts, if using.
  5. Using a tablespoon or cookie scoop, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden. The centers may look slightly underbaked; they will firm up as they cool.
  7. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
