For the Bowl

  • 1 cup Sweet Corn Kernels frozen or canned corn can be used
  • 0.5 cup Red Onion scallions can be a milder alternative
For the Topping
  • 0.5 cup Cotija Cheese feta cheese can be a good alternative
  • 0.25 cup Sour Cream
  • 0.25 cup Mayonnaise Greek yogurt works for a healthier substitution

Marination and Cooking
  1. In a mixing bowl, whisk together lime juice, avocado oil, chili powder, garlic powder, salt, and black pepper until well combined. Add chicken thighs and coat evenly. Cover and refrigerate for 15 to 30 minutes.
  2. Preheat a skillet over medium-high heat, add oil, and cook chicken for 8 to 10 minutes per side until golden brown and cooked through. Let rest before slicing.
  3. In a separate bowl, combine grilled corn, red onion, sour cream, mayonnaise, Cotija cheese, chili powder, salt, and pepper. Mix with fresh lime juice until creamy.
  4. Reheat cooked rice by adding a splash of water and warming in the microwave or on the stove for about 2-3 minutes. Fluff with a fork.
  5. In serving bowls, layer rice, sliced chicken, and street corn mixture. This colorful layering enhances taste and presentation.
  6. Garnish with extra Cotija cheese and fresh cilantro. Serve with lime wedges for a fresh squeeze before enjoying.
