Ingredients

For the Pasta
  • 12 oz fettuccine or linguine Acts as the base and heart of the dish, lending texture.
For the Vegetables
  • 2 large leeks, sliced Brings a sweet onion flavor when caramelized; use only the white and light green parts.
  • 8 oz mushrooms (cremini or button), sliced Adds earthiness and depth to the flavor; cremini enhances richness.
  • 2 cloves garlic, minced Provides aromatic depth to the dish; fresh garlic is key for fragrance.
For the Sauce
  • 1.5 cups Gruyere cheese, shredded Essential for a creamy, rich sauce; can substitute with Fontina or Swiss cheese for variation.
  • 0.5 cup heavy cream Creates a velvety texture in the sauce; essential for that indulgent quality.
  • 2 tablespoons unsalted butter Aids in caramelizing the leeks without added salt; essential for achieving rich flavor.
  • 2 tablespoons olive oil Used for sautéing, enhancing overall flavor; prevents sticking in the skillet.

Sauté Mushrooms and Garlic
  1. Add the sliced mushrooms to the skillet and cook for 6 to 8 minutes. Stir in the minced garlic and cook for about 1 minute until fragrant.
Create the Cheese Sauce
  1. Lower the heat, pour in the heavy cream, and gradually add the shredded Gruyere cheese, mixing until a smooth, creamy sauce forms.
Combine Pasta and Sauce
  1. Add the drained pasta into the skillet, toss with the sauce, and adjust consistency with reserved pasta water if necessary. Season with salt and pepper.
