Cooking Directions
  1. Bring a large pot of salted water to a rolling boil. Add pasta and cook until al dente, about 8-10 minutes. Reserve a cup of pasta water, then drain.
  2. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add sliced mushrooms, season with salt and pepper, and sauté for 5-7 minutes until tender.
  4. Reduce heat to low, mix in ricotta cheese, and stir, adding reserved pasta water for desired consistency.
  5. Add drained pasta to the skillet, toss to coat evenly, and heat for 1-2 minutes.
  6. Serve immediately, garnished with fresh parsley.
