- Preheat your oven to 350°F (180°C) and prepare a 9-inch baking pan ungreased.
- Cream together ½ cup of softened butter, ¾ cup of brown sugar, and ½ cup of white sugar until light and fluffy. Add in 1 egg and 1 teaspoon of vanilla extract, and beat until combined.
- Whisk together 1 ½ cups of flour, 1 teaspoon of baking powder, ½ teaspoon of salt, 1 teaspoon of cinnamon, and ¼ teaspoon of nutmeg. Gradually mix into the wet ingredients on low speed until just combined.
- Fold in 1 ½ cups of quick oatmeal and ½ cup of milk chocolate chips until evenly distributed.
- Spread the mixture into the prepared baking pan and sprinkle the remaining ½ cup of milk chocolate chips on top.
- Bake for 20 to 25 minutes until the center is set and a toothpick comes out clean.
