Step-by-Step Instructions
  1. Heat a large skillet over medium-high heat and add a splash of olive oil. Sauté sliced smoked sausage or kielbasa for 5–7 minutes until browned.
  2. In the same skillet, reduce heat to medium and melt 2 tablespoons of butter. Add minced garlic and sauté for about 30 seconds until fragrant.
  3. Pour in 2 cups of chicken broth and 1 cup of milk, scraping the bottom to incorporate browned bits. Stir in ranch seasoning and simmer for 2-3 minutes.
  4. Toss in 12 ounces of rotini pasta, mostly submerged in liquid. Cover and let simmer for about 12–15 minutes until al dente.
  5. Reduce heat to low and add 1 cup of shredded white cheddar cheese, stirring continuously until melted and creamy.
  6. Fold in 2 cups of baby spinach and 1 cup of roasted red peppers, then return the browned sausage to combine everything before serving.
