- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine crumbled feta, ricotta, fresh dill, parsley, and lemon zest. Season with salt and pepper, mixing well.
- Lay out phyllo sheets on a clean surface covered with a damp towel. Brush one sheet with olive oil, layer another on top, and brush this sheet as well.
- Spoon a generous amount of the cheese filling along one edge of the phyllo sheet, fold sides in, and roll tightly to create a log shape.
- Place rolls seam-side down on the baking sheet, brush with olive oil, and sprinkle sesame seeds on top. Bake for 25-30 minutes until golden brown.
- Heat honey in a small saucepan and stir in red chili flakes. Simmer until warm and slightly thickened.
- Remove rolls from the oven and drizzle with warm chili honey before serving.
