For the Liquid
  • 1 cup Chicken Broth Low-sodium recommended.
  • 1/2 cup White Wine Chardonnay or Pinot Grigio.

Step-by-Step Instructions
  1. Preheat your oven to 400°F (204°C) and line a casserole dish with foil.
  2. Spread sliced shallots in the dish, nestle half of garlic cloves, and sprinkle thyme and rosemary over.
  3. Drizzle chicken pieces with oil, season with salt and pepper, and arrange skin-side up on shallots, adding remaining garlic.
  4. Pour chicken broth and white wine around chicken, avoiding contact with skin.
  5. Roast uncovered in the oven for about 1 hour until skin is golden brown and reaches 165°F (74°C).
  6. Switch to broil mode for an additional 5-7 minutes for added crispiness, watching closely.
  7. Remove from oven, let rest for a few minutes, and serve with pan juices.
