  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, combine the diced peaches, peach preserves, soy sauce, apple cider vinegar, garlic powder, onion powder, salt, and black pepper. Mix well to create the glaze.
  3. Pat the chicken thighs dry with paper towels. Rub the olive oil over the chicken and season with a little extra salt and pepper.
  4. Heat a large oven-safe skillet over medium-high heat. Once hot, add the chicken thighs skin-side down and sear for about 5-7 minutes until the skin is golden brown and crispy.
  5. Flip the chicken thighs over and pour the peach glaze over them, ensuring they are well coated.
  6. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the internal temperature of the chicken reaches 165°F (75°C).
  7. Remove the skillet from the oven and let the chicken rest for 5 minutes before serving. Garnish with fresh thyme or parsley if desired.
