Ingredients
  

  • 4 boneless skinless chicken breasts (about 1.5 pounds)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 lime juiced
  • 1 cup fresh cilantro leaves packed
  • 1 jalapeño pepper seeds removed
  • 2 cloves garlic minced
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon lime juice

Method
 

  1. Preheat the oven to 400°F.
  2. In a large bowl, combine olive oil, garlic powder, paprika, cumin, salt, pepper, and lime juice.
  3. Add the chicken breasts and coat them evenly with the marinade. Let them marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
  4. Place the marinated chicken on a baking sheet lined with parchment paper.
  5. Bake for 20-25 minutes or until the internal temperature reaches 165°F.
  6. Remove from the oven and let rest for 5 minutes before slicing.
  7. While the chicken is baking, prepare the Aji Verde by blending cilantro, jalapeño, minced garlic, mayonnaise, sour cream, lime juice, salt, and pepper until smooth.
  8. Serve the sliced chicken drizzled with Aji Verde on top or on the side.

Notes

  • For a milder sauce, use less jalapeño or substitute with a green bell pepper.
