  • 1/4 cup pine nuts toasted
  • 1 head of romaine lettuce leaves separated
  • Salt and pepper to taste

Method
 

  1. In a large bowl, combine the shredded chicken and basil pesto. Mix until the chicken is well coated.
  2. Add the halved cherry tomatoes, shredded mozzarella cheese, and toasted pine nuts to the chicken mixture. Gently fold to combine.
  3. Season with salt and pepper to taste.
  4. Take a romaine lettuce leaf and spoon a generous amount of the pesto chicken mixture into the center.
  5. Wrap the lettuce leaf around the filling and serve immediately.
