Method
- In a large mixing bowl, combine the shredded chicken and basil pesto. Mix well until the chicken is evenly coated with the pesto.
- Add the halved cherry tomatoes, shredded mozzarella cheese, and toasted pine nuts to the chicken mixture. Gently fold to combine. Season with salt and pepper to taste.
- Take a lettuce leaf and spoon a generous amount of the pesto chicken mixture into the center.
- Fold the sides of the lettuce leaf over the filling and roll it up to create a wrap. Repeat with the remaining lettuce leaves and filling.
- Serve immediately, or chill in the refrigerator for up to 30 minutes before serving for a refreshing twist.
