Ingredients
  

  • 2 cups cooked chicken shredded
  • 1/2 cup basil pesto
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup pine nuts toasted
  • 1 head of butter lettuce leaves separated
  • Salt and pepper to taste

Method
 

  1. In a large mixing bowl, combine the shredded chicken and basil pesto. Mix well until the chicken is evenly coated with the pesto.
  2. Add the halved cherry tomatoes, shredded mozzarella cheese, and toasted pine nuts to the chicken mixture. Gently fold to combine. Season with salt and pepper to taste.
  3. Take a lettuce leaf and spoon a generous amount of the pesto chicken mixture into the center.
  4. Fold the sides of the lettuce leaf over the filling and roll it up to create a wrap. Repeat with the remaining lettuce leaves and filling.
  5. Serve immediately, or chill in the refrigerator for up to 30 minutes before serving for a refreshing twist.
