Ingredients
  

  • 2 cups ripe tomatoes diced
  • 1 cup onion finely chopped
  • 1/2 cup fresh cilantro chopped
  • 1-2 jalapeño peppers seeded and minced (adjust for spice preference)
  • 1/4 cup lime juice about 2 limes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

  1. In a large mixing bowl, combine the diced tomatoes, chopped onion, minced jalapeño, and chopped cilantro.
  2. Pour the lime juice over the mixture and sprinkle with salt and black pepper.
  3. Gently toss all the ingredients together until well combined.
  4. Taste and adjust seasoning if necessary, adding more salt or lime juice to your liking.
  5. Let the pico de gallo sit for at least 15 minutes to allow the flavors to meld. For best results, refrigerate for 1 hour before serving.
