- Preheat your oven to 350°F (175°C) and prepare a 9x5-inch loaf pan by greasing it or lining it with parchment paper.
- Whisk together the dry ingredients: 2 cups of all-purpose flour, 1 teaspoon of baking powder, 1 teaspoon of baking soda, ½ teaspoon of salt, 1 teaspoon of ground cinnamon, and ½ teaspoon of ground nutmeg.
- In a separate bowl, mix together 1 cup of granulated sugar, ½ cup of brown sugar, and ½ cup of melted butter until smooth. Beat in 2 large eggs, followed by 1 cup of shredded zucchini, 1 cup of crushed pineapple, and 1 teaspoon of vanilla extract. Whisk until combined.
- Gradually fold the dry ingredients into the wet mixture, being careful not to overmix. Fold in chopped walnuts or pecans if desired.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 55–65 minutes, checking with a toothpick for doneness until it comes out clean.
- Let the bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing.
