  • 1 cup Pistachios Coarsely chopped, fresh and shelled.
  • 2 tablespoons Honey Natural honey balances the savory flavor.
  • 1 tablespoon Fresh Rosemary Finely chopped; dried can work too.
  • to taste Sea Salt Adjust to enhance flavor.
  • to taste Black Pepper Adjust to enhance flavor.
  • 1 sheet Puff Pastry Keep it chilled before use.
  • 1 large Egg For wash, beat with a splash of water.
For Garnish
  • 1/2 cup Fresh Cranberries or Pomegranate Seeds Optional, for garnish.

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine coarsely chopped pistachios, honey, rosemary, sea salt, and black pepper. Mix until well combined.
  3. Roll out the chilled puff pastry to 1/8 inch thickness and cut into 3x3 inch squares.
  4. Place a piece of Brie cheese in the center of each pastry square. Top with pistachio mixture and fold over the pastry corners to seal.
  5. Beat egg with water and brush the tops of the bites for a golden finish.
  6. Bake for 15 to 20 minutes, or until puffed and golden brown. Watch closely to avoid burning.
  7. Remove from the oven and garnish with cranberries or pomegranate seeds before serving warm.
