  • 1 teaspoon Sugar No substitution needed.
  • 2 cloves Garlic, minced Skip if you're not a fan.
  • 1 Shallot, diced Substitute with extra onion if needed.
  • 0.5 tablespoon Fresh Thyme, chopped Oregano or basil can stand in if preferred.
  • Salt Adjust to taste.
  • Pepper Adjust to taste.
For the Cheesy Toppings
  • 0.5 cups Parmesan Cheese, freshly grated Skip for a dairy-free version.
  • 2 cups Havarti Cheese, freshly grated Substitute with mozzarella for a lighter option.
For the Garnish
  • 1 cup Arugula You can use spinach as an alternative.
  • Extra Virgin Olive Oil Any neutral oil can work if that’s what you have.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and place a pizza stone inside.
  2. In a skillet, heat a drizzle of extra virgin olive oil. Add half the diced onion and cook for about 10 minutes, adding sugar halfway.
  3. In a bowl, combine pumpkin puree, minced garlic, diced shallot, chopped thyme, remaining onion, Parmesan cheese, salt, and pepper. Set aside.
  4. Shape the ready-to-bake dough as per the package instructions.
  5. Transfer the dough to the heated pizza stone. Spread the pumpkin mixture, then layer on caramelized onions. Add arugula and Havarti cheese.
  6. Bake according to dough instructions, checking for doneness after 10-12 minutes.
  7. Remove from oven, cool for a few minutes, then slice and serve.
