Ingredients
  

  • 2 medium carrots peeled and chopped
  • 1 medium beet peeled and chopped
  • 1 medium apple cored and chopped
  • 1 cup fresh spinach
  • 1 cup pineapple chunks fresh or canned
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon ginger grated
  • 2 cups cold water

Method
 

  1. In a blender, combine the carrots, beet, apple, spinach, pineapple, lemon juice, ginger, and cold water.
  2. Blend on high until smooth, about 1-2 minutes.
  3. If desired, strain the mixture through a fine mesh sieve or cheesecloth to remove pulp for a smoother juice.
  4. Pour the juice into glasses and serve immediately over ice if preferred.
