Method
- In a cocktail shaker, combine the tequila, fresh lime juice, passionfruit puree, raspberry syrup, and egg white (if using).
- Dry shake (without ice) for about 15 seconds to emulsify the egg white and create froth.
- Add ice cubes to the shaker and shake vigorously for another 15-20 seconds until well chilled.
- Strain the mixture into a chilled coupe or rocks glass.
- Garnish with fresh raspberries and a slice of lime.

- To make raspberry syrup, combine 1 cup of fresh or frozen raspberries, 1 cup of sugar, and 1 cup of water in a saucepan. Simmer until the raspberries break down, then strain and cool.
- For a non-alcoholic version, replace tequila with sparkling water and increase the passionfruit puree for a refreshing mocktail.
