Ingredients
  

  • 2 large cucumbers peeled and chopped
  • 1 cup fresh lemon juice about 4-6 lemons
  • 1 cup granulated sugar
  • 4 cups cold water
  • Ice cubes
  • Fresh mint leaves for garnish optional
  • Lemon slices for garnish optional

Method
 

  1. In a blender, combine the chopped cucumbers and 1 cup of cold water. Blend until smooth.
  2. Strain the cucumber puree through a fine mesh sieve into a large pitcher, pressing down to extract as much juice as possible. Discard the solids.
  3. Add the fresh lemon juice and granulated sugar to the cucumber juice in the pitcher. Stir until the sugar is fully dissolved.
  4. Pour in the remaining 3 cups of cold water and mix well. Taste and adjust sweetness by adding more sugar if desired.
  5. Chill the lemonade in the refrigerator for at least 30 minutes before serving.
  6. Serve over ice cubes and garnish with fresh mint leaves and lemon slices if desired.

Notes

  • For a sparkling twist, substitute half of the cold water with sparkling water.
