  • ½ cup feta cheese crumbled, high-quality sheep's feta
  • 5-10 leaves fresh basil chopped
  • 5-10 leaves fresh mint chopped
For the Dressing
  • ¼ cup olive oil rich base for dressing
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon honey substitute with maple syrup for vegan
  • 1 tablespoon white wine vinegar apple cider vinegar optional
  • ¼ teaspoon garlic powder for savory note

Preparation Steps
  1. In a small bowl or jar, whisk together olive oil, lemon juice, honey, white wine vinegar, garlic powder, and a pinch of salt and pepper. Mix until well combined and set aside.
  2. Slice strawberries into quarters and chop cucumbers into bite-sized pieces. In a large serving bowl, combine strawberries and cucumbers.
  3. Crumble feta cheese over the mixture and sprinkle chopped basil and mint leaves on top.
  4. Pour the dressing over the salad mixture and gently toss until everything is lightly coated.
  5. Taste the salad and adjust seasoning with additional salt and pepper if needed. Serve immediately.
