  1. Begin by thinly slicing 2 cups of shallots and setting them aside. Heat a skillet over medium-high heat and add olive oil.
  2. Once the oil shimmers, reduce the heat to low and add the shallots. Stir occasionally for about 20-30 minutes until they soften and turn a deep amber color.
  3. Preheat your oven to 450°F (232°C) for roasting the green beans.
  4. In a large mixing bowl, toss 2 pounds of trimmed green beans with olive oil and salt. Spread in a single layer on a baking sheet.
  5. Roast in the preheated oven for 15-25 minutes, stirring halfway through, until blistered and tender.
  6. Once done, remove the roasted green beans and toss them with vinegar and additional salt to taste.
  7. Transfer to a serving platter and top with caramelized shallots. Serve immediately.
