  • 1 can 14.75 ounces pink salmon, drained and flaked
  • 1/2 cup breadcrumbs
  • 1/4 cup mayonnaise
  • 1 large egg
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/4 cup green onions finely chopped
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 2 tablespoons olive oil for frying

Method
 

  1. In a large bowl, combine the flaked salmon, breadcrumbs, mayonnaise, egg, Dijon mustard, lemon juice, green onions, garlic powder, salt, black pepper, and paprika. Mix until well combined.
  2. Form the mixture into patties, about 2-3 inches in diameter. You should have about 6-8 patties.
  3. Heat the olive oil in a large skillet over medium heat. Once hot, add the patties to the skillet, cooking in batches if necessary to avoid overcrowding.
  4. Cook the patties for about 4-5 minutes on each side, or until golden brown and cooked through. Remove from the skillet and drain on paper towels.
  5. Serve warm with your favorite dipping sauce or a squeeze of fresh lemon.
