In a large bowl, combine the flaked salmon, breadcrumbs, mayonnaise, onion, bell pepper, egg, Dijon mustard, garlic powder, salt, and black pepper. Mix until well combined.
Shape the mixture into patties, about 2-3 inches in diameter. You should have about 8 patties.
Heat the olive oil in a large skillet over medium heat. Once hot, add the salmon patties in batches, being careful not to overcrowd the pan.
Cook each patty for about 4-5 minutes on each side, or until golden brown and cooked through. Remove from the skillet and drain on paper towels.
Serve warm with lemon wedges on the side.
