Ingredients
  

  • 4 6-ounce salmon fillets
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 ripe mango diced
  • 1/2 red onion finely chopped
  • 1 jalapeño seeded and minced
  • 1/4 cup fresh cilantro chopped
  • Juice of 1 lime
  • Salt to taste

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper. Place the salmon fillets on the sheet and drizzle with olive oil. Season with garlic powder, paprika, salt, and pepper.
  3. Bake the salmon in the preheated oven for 12-15 minutes, or until it flakes easily with a fork.
  4. While the salmon is baking, prepare the mango salsa. In a medium bowl, combine the diced mango, red onion, jalapeño, cilantro, lime juice, and a pinch of salt. Mix well and set aside.
  5. Once the salmon is done, remove it from the oven and let it rest for a couple of minutes.
  6. Serve the salmon topped with a generous scoop of mango salsa.
