- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Allow the oil to shimmer, then add the diced onion and sauté for 3-4 minutes until translucent.
- Next, add the sliced chicken sausage to the skillet. Cook for about 5-7 minutes until browned and heated through.
- Stir in 2 cloves of minced garlic and sauté for an additional minute, ensuring it becomes fragrant but does not burn.
- Pour in 4 cups of low-sodium chicken broth and bring to a gentle boil. Stir in 1 cup of orzo pasta and 1 teaspoon of Italian seasoning.
- Reduce heat to low, cover, and let it simmer for about 10 minutes, stirring occasionally.
- Add 2 cups of broccoli florets, cover, and cook for an additional 5 minutes until the broccoli is bright green and tender-crisp.
- To finish, season with salt and pepper to taste and stir in ½ cup of grated Parmesan cheese until melted.
- Remove from heat and spoon onto plates. Garnish with chopped fresh parsley and enjoy.
