Cooking Instructions
  1. In a large skillet over medium heat, pour in vegetable or coconut oil. Heat until shimmering, about 1-2 minutes.
  2. Add diced chicken to the skillet, seasoning generously with salt and pepper. Sauté for 5-7 minutes, until golden brown and reaches 165°F.
  3. Stir in minced garlic and grated ginger. Cook together for about 1 minute until fragrant.
  4. Pour in coconut milk, soy sauce, and lime juice. Stir and let simmer on low heat for 5-7 minutes, until sauce thickens.
  5. Prepare cooked rice according to package instructions while the sauce is simmering.
  6. Spoon sautéed coconut chicken and sauce over the cooked rice. Garnish with chopped cilantro or sliced green onions.
