Preheat your oven to 400°F (200°C).
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.
Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
Stir in the diced sweet potatoes, smoked paprika, oregano, salt, and black pepper. Mix well to combine.
Pour in the chicken broth, bring to a simmer, and cover the skillet. Cook for about 10-15 minutes, or until the sweet potatoes are tender.
Transfer the turkey and sweet potato mixture to a greased 9x13-inch baking dish.
Sprinkle the shredded cheddar cheese evenly over the top.
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let cool for a few minutes before garnishing with fresh parsley.
