Ingredients
  

  • 1 pound ground turkey
  • 2 medium sweet potatoes peeled and diced (about 2 cups)
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup chicken broth
  • 1 cup shredded cheddar cheese
  • 2 tablespoons olive oil
  • Fresh parsley chopped (for garnish)

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.
  3. Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
  4. Stir in the diced sweet potatoes, smoked paprika, oregano, salt, and black pepper. Mix well to combine.
  5. Pour in the chicken broth, bring to a simmer, and cover the skillet. Cook for about 10-15 minutes, or until the sweet potatoes are tender.
  6. Transfer the turkey and sweet potato mixture to a greased 9x13-inch baking dish.
  7. Sprinkle the shredded cheddar cheese evenly over the top.
  8. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  9. Remove from the oven and let cool for a few minutes before garnishing with fresh parsley.
