  • 1 pound Chicken (Thigh or Breast) Thighs are preferred for juiciness
  • 10 pieces Wooden Skewers Soak in water for 10–20 minutes before using

Method
 

Step-by-Step Instructions
  1. Soak your wooden skewers in water for 10–20 minutes.
  2. In a mixing bowl, whisk together soy sauce, water, red wine or mirin, brown sugar, and vinegar until dissolved.
  3. Combine minced garlic, ginger, and ground pepper in a separate bowl; mix with a portion of the marinade and coat the chicken. Marinate for at least 10 minutes.
  4. Heat the remaining marinade in a saucepan until it boils; mix with cornstarch for a glaze.
  5. Thread marinated chicken onto skewers and preheat the grill to medium-high.
  6. Grill skewers for 8–12 minutes, basting with glaze and turning occasionally until cooked through.
  7. Let rest for a couple of minutes before serving.
