  • 1/2 cup Parmesan Cheese Substitute with pecorino if desired.
  • 2 large Eggs For binding.
  • 2 tablespoons Olive Oil For sautéing.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Roll out the chilled puff pastry and fit it into the tart pan.
  3. Sauté diced onion and minced garlic in olive oil until translucent.
  4. Add cremini mushrooms and cook until golden, then stir in fresh sage and thyme.
  5. In a mixing bowl, combine pumpkin puree, ricotta, half of the Parmesan, and eggs.
  6. Add the sautéed vegetables and season mixture with salt and pepper.
  7. Pour the filling into the puff pastry and top with remaining Parmesan.
  8. Bake for 30-35 minutes until golden brown and slightly jiggly in the center.
  9. Cool for 10-15 minutes, then garnish with toasted pumpkin seeds and sage.
