- In a medium bowl, whisk together peanut butter, soy sauce, honey, vinegar or lime juice, sesame oil, minced garlic, grated ginger, and chili flakes. Gradually add water or broth until smooth.
- Place chicken pieces evenly at the bottom of the slow cooker.
- Pour the peanut sauce over the chicken, ensuring each piece is coated. Stir gently to combine.
- Cover and cook on low for 4–6 hours or high for 2–3 hours until chicken is tender and easily shreds.
- Remove lid and shred the chicken directly in the slow cooker, stirring into the sauce.
- Spoon chicken and sauce into bowls, garnishing with crushed peanuts and additional herbs if desired.
