For the Topping
  • 1 cup shredded cheese cheddar or dairy-free alternative
  • 1 cup fresh cilantro for garnish

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Peel and dice sweet potatoes, then boil in salted water for 10-15 minutes until fork-tender.
  3. In a large bowl, combine sweet potatoes, black beans, corn, and spices. Mix gently.
  4. Grease a baking dish, layer the sweet potato mixture, and pour diced tomatoes over it. Top with shredded cheese if desired.
  5. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes.
  6. Let cool for 5 minutes and garnish with fresh cilantro before serving.
