  • 1 pound large shrimp peeled and deveined
  • 8 ounces cream cheese softened
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced tomatoes canned or fresh
  • 1/4 cup diced green onions
  • 1/4 cup chopped fresh cilantro
  • 2 cloves garlic minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Tortilla chips for serving

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the softened cream cheese, Monterey Jack cheese, cheddar cheese, diced tomatoes, green onions, cilantro, minced garlic, chili powder, cumin, salt, and pepper. Mix until well combined.
  3. Gently fold in the shrimp until they are evenly coated with the cheese mixture.
  4. Transfer the mixture to a greased baking dish and spread it evenly.
  5. Bake in the preheated oven for 25-30 minutes, or until the shrimp are cooked through and the cheese is bubbly and golden.
  6. Remove from the oven and let it cool for a few minutes before serving. Serve warm with tortilla chips.
