  • 1 medium Onion Can substitute with shallots
  • 3 cloves Garlic Minced
For the Sauce
  • 1 cup Chicken Broth Optional, but recommended
  • 1 juice of Lemon Freshly squeezed preferred
  • ¼ cup Olive Oil Avoid lighter oils
For the Seasoning
  • 2 teaspoons Dried Oregano
  • 1 teaspoon Dried Thyme
  • to taste Sea Salt
  • to taste Black Pepper

Method
 

Step-by-Step Instructions
  1. Place 2-3 pounds of chicken breasts or thighs into the slow cooker.
  2. Thinly slice one medium onion and layer it on top of the chicken.
  3. Whisk together chicken broth, lemon juice, minced garlic, olive oil, oregano, thyme, salt, and pepper in a mixing bowl.
  4. Pour the prepared sauce over the chicken and onion layers in the slow cooker.
  5. Cover and set the slow cooker to LOW for 5-6 hours or HIGH for 3-4 hours.
  6. Once cooked, shred the chicken directly in the slow cooker using two forks.
  7. Serve warm over rice, pasta, or in pita, garnished with feta or fresh herbs.
