For the Sweet Chili Sauce
  • 1 cup sweet chili sauce
  • 2 tablespoons soy sauce can use low sodium
  • 1 tablespoon rice vinegar
  • 1 teaspoon garlic minced
  • 1 teaspoon ginger minced
For the Chicken
  • 4 pieces chicken breasts boneless, skinless
  • 1 cup vegetable broth
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Method
 

Cooking Steps
  1. Combine sweet chili sauce, soy sauce, rice vinegar, garlic, and ginger in a bowl.
  2. Place chicken breasts in the slow cooker and season with salt and pepper.
  3. Pour the sweet chili sauce mixture over the chicken.
  4. Add vegetable broth and cover the slow cooker.
  5. Cook on low for 6 hours or high for 3 hours.
  6. Once cooked, shred the chicken using two forks.
  7. Serve with rice or noodles, garnished with green onions.
