- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine 1 cup of creamy peanut butter, 1 cup of brown sugar, and 1/2 cup of granulated sugar. Beat until light and fluffy, about 2-3 minutes.
- Add 1 large egg and 1 teaspoon of vanilla extract. Mix on low speed until fully integrated.
- Sprinkle in 1 teaspoon of baking soda and a pinch of salt. Stir gently until just combined.
- Fold in 1 cup of colorful M&M's, reserving a few for decoration.
- Scoop out the dough into uniform balls and place them on the prepared baking sheet, ensuring about 2 inches of space between each.
- Flatten each ball to about 1/2 inch thick and press additional M&M's on top.
- Bake for 8-10 minutes until edges are set and centers are slightly underbaked.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
