Step-by-Step Instructions

  2. Reduce the oven temperature to 375°F (190°C). Grease a 9x13 inch baking dish with olive oil or butter.
  3. Combine the roasted sweet potatoes with almond milk, vanilla extract, brown sugar, maple syrup, and spices. Mix until incorporated but leave some chunks for texture.
  4. Transfer the sweet potato mixture to the greased baking dish. Dot with pieces of butter and sprinkle marshmallows on top if desired.
