- Preheat your oven to 400°F (204°C). Peel and cube fresh sweet potatoes, toss with olive oil, cinnamon, and nutmeg. Spread on a baking sheet and bake for 50–60 minutes until tender.
- Reduce the oven temperature to 375°F (190°C). Grease a 9x13 inch baking dish with olive oil or butter.
- Combine the roasted sweet potatoes with almond milk, vanilla extract, brown sugar, maple syrup, and spices. Mix until incorporated but leave some chunks for texture.
- Transfer the sweet potato mixture to the greased baking dish. Dot with pieces of butter and sprinkle marshmallows on top if desired.
- Mix pecans with maple syrup and spread over the sweet potato mixture.
- Cover with foil and bake for 15 minutes. Remove foil and bake uncovered for another 15 minutes until golden brown.
