Ingredients
  

  • 2 racks of St. Louis-style pork ribs about 4 pounds total
  • 1 tablespoon olive oil
  • 2 tablespoons brown sugar
  • 1 tablespoon paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 teaspoon cayenne pepper optional for heat
  • 1 cup BBQ sauce your favorite brand or homemade

Method
 

  1. Preheat your oven to 300°F.
  2. Remove the membrane from the back of the ribs for better flavor and tenderness.
  3. Pat the ribs dry with paper towels and rub olive oil all over them.
  4. In a small bowl, mix together brown sugar, paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper.
  5. Generously apply the spice rub to both sides of the ribs, pressing it into the meat.
  6. Place the ribs on a large baking sheet lined with aluminum foil, meat side up. Cover the ribs tightly with another piece of foil.
  7. Bake in the preheated oven for 2.5 to 3 hours, until the ribs are tender.
  8. Remove the ribs from the oven and increase the temperature to 400°F.
  9. Brush a generous amount of BBQ sauce over the ribs and return them to the oven, uncovered, for an additional 15-20 minutes, until the sauce is caramelized.
  10. Let the ribs rest for 10 minutes before slicing and serving.
