In a blender, combine the sliced strawberries and honey (or maple syrup). Blend until smooth. If you prefer a chunkier texture, pulse a few times instead of blending completely.
In a small bowl, whisk together the matcha powder and water until smooth and fully combined. You can use a matcha whisk or a regular whisk.
In a glass, layer the strawberry puree at the bottom.
If using ice, add a few ice cubes on top of the strawberry layer.
Slowly pour the milk over the strawberry layer.
Finally, gently pour the prepared matcha on top of the milk. You can use a spoon to help layer it if desired.
For a finishing touch, add whipped cream on top if you like, and serve immediately.
