Ingredients
  

  • 1 ½ pounds ground beef
  • 1 cup Italian sausage casings removed
  • 1 cup breadcrumbs
  • 1 large egg
  • ½ cup grated Parmesan cheese
  • ½ cup chopped fresh parsley
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup marinara sauce divided
  • 1 cup shredded mozzarella cheese
  • 1 bell pepper diced
  • 1 small onion diced

Method
 

  1. Preheat the oven to 350°F.
  2. In a large bowl, combine the ground beef, Italian sausage, breadcrumbs, egg, Parmesan cheese, parsley, garlic, oregano, basil, salt, and pepper. Mix until well combined.
  3. On a sheet of parchment paper or plastic wrap, shape the meat mixture into a rectangle about 1 inch thick.
  4. Spread half of the marinara sauce over the meat, leaving a small border around the edges.
  5. Sprinkle the mozzarella cheese, diced bell pepper, and onion evenly over the sauce.
  6. Starting from one end, carefully roll the meatloaf up, using the parchment paper to help guide it. Pinch the edges to seal and place seam-side down in a greased baking dish.
  7. Brush the remaining marinara sauce over the top of the meatloaf.
  8. Bake for 1 hour or until the internal temperature reaches 160°F.
  9. Let it rest for 10 minutes before slicing.
