In a medium bowl, combine graham cracker crumbs and melted butter. Mix until the crumbs are evenly coated. Press the mixture into the bottom of a 9x13-inch baking dish to form the crust. Refrigerate for 15 minutes to set.
In a large bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
In another bowl, whip the heavy cream and granulated sugar until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until combined.
Spread half of the cream cheese mixture over the chilled graham cracker crust.
Layer half of the mixed berries over the cream cheese layer.
Repeat the layers with the remaining cream cheese mixture and then the remaining berries.
Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
Before serving, garnish with fresh mint leaves. Cut into squares and enjoy!
