Method
 

Cooking Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the fresh spinach, sundried tomatoes, mozzarella, cream cheese, garlic powder, Italian seasoning, salt, and pepper.
  3. Prepare the chicken breasts by slicing horizontally to create a pocket.
  4. Generously fill each chicken breast pocket with the spinach and cheese mixture.
  5. Heat olive oil in an oven-safe skillet and sear the stuffed chicken breasts for 3-4 minutes on each side.
  6. Transfer the skillet to the preheated oven and bake for 25-30 minutes or until cooked through.
  7. Let the stuffed chicken rest for about 5 minutes before serving.
